Under the watchful eye of our Executive Chef Timothy Au,
dining at the Mayflower Inn & Spa is always a fresh, healthy—and
innovative event.
Prior to coming to the Mayflower, Chef Au was Chef de Cuisine
at the award winning Torrey Pines. Classically trained by
the internationally acclaimed Chef Jeff Jackson of the A.R.
Valentin restaurant, and James Beard Winner Sanford D'amato,
Au is fast becoming known for his own exacting and rarified
vision that (in collaboration with Chef Neff) uses locally
grown produce to reinvent New England's confluence of heritage
cooking in uncommonly delicious new ways.
