Pan roasted organic Atlantic Farm raised Salmon, Smoked Salmon

Swordfish
Swordfish line caught in Hawaiian waters flown direct to us
from a friend of mine. (Past contact while I lived on
the Big Island”Hawaii”). Marinated with orange
peel & ground coriander, 1⁄2 of Orzo Pasta is toasted
heavily with E.V.O.O. while the other 1⁄2 is not toasted.
Cooked in 1/3 fish stock & 2/3 chicken stock until Al
dente, Roasted Red Bell peppers are added along with fresh
Greek oregano and finished with fresh squeezed orange juice.
Swordfish is topped with a mild white Anchovy butter (shallots,
Chervil, Chive & Parsley, Lemon in anchovy marinade)
Tile Fish
Tile fish has been decaled and served with crispy skin. Butternut
Squash is cooked with yellow onion & chicken stock like
risotto. (Finished with cream to bind squash together)
Shallots are caramelized in sweet butter; shaved Brussels
sprouts are added & tossed lightly. Shiitake mushrooms
are pickled with fresh thyme, garlic & shallots, vinegar,
olive oil & sugar) Sauce is made by combining 1⁄2
fish stock & 1⁄2 Demi glace & pickled Shiitake
are added to sauce to complete.
New York Steak
Steak is marinated with fresh bay leaves, thyme, garlic &
black peppercorns & prepared to order, Broccoli is braised
with fresh laurel (bay leaves) in a Beurre fondue. Olive oil
mashed Potatoes, Pancetta Lardons (crisp unsmoked Italian
small diced bacon cubes) served with a red wine Demi glace.
Chicken
Chicken is stuffed with aromatic vegetables, parsley stems
& lemon, tied & roasted) Mashed potatoes, Young vegetables
(green & yellow pitty pan squash, haricot verts &
baby carrots) & dark chicken jus
Lamb Chops
Colorado lamb chops are dry marinated with fresh bay leaves,
thyme, garlic & black peppercorns and cooked to desired
temp. Sweet potatoes are roasted with thyme, garlic, ground
black pepper & maple syrup. Oven roasted Ciopollini onions;
thick bias cut jumbo asparagus and toasted whole almonds,
Lamb Jus.
